Okay, Dia's effect banishes a fusion gem monster and gains their name and effect. If I banish Gem-Knight Aquamarine and Dia is removed from the field, does his effect activate to return 1 card to their owner's hand?

No.

It is no longer treated as the monster it copied when it leaves the field.

Unless the effects of the copied monsters are continuous and apply before they would leave the field, all effects that would activate in a place besides from the field are not activated.

Hmmm, well at has the same effect activation as Sangan or someone like that so I guess it wouldn't work. I do actually, about Dia. His effect allows him to copy the name and effect of a fusion gem monster once per turn. Does this include my opponents turn?

Ignition Effects can only be activated during your Main Phase, so, No.
