So lets say i have a LV 8 monster in my hand, Mausoleum on the field, and one monster on the field. Instead of paying 2000 LP cant I just sacrifice my monster and pay 1000 LP instead?

No, you cannot. You either pay the entirety of 2000 LP or tribute 2 monsters.
